Tropical Waffle Bake

The tropical part might sound a little off-putting but this dish comes together in a delicious way. All three of us love this breakfast and it's wonderful, tasty combination. There's just the right amount of sweetness, balanced perfectly by the waffles and eggs.
I like pulling this recipe out when we have just a few waffles in the freezer, it does a great job of stretching them to make a full meal.
Tropical Waffle Bake

Yields: 4-6 servings

Ingredients:
4 waffles, ripped into 2 inch pieces
1 or 2 bananas, sliced
3 eggs
1/3 cup sugar
1 can crushed or chunk pineapple, drained
1 cup granola {mine has cranberries in, a nice addition for this recipe}
1/4 cup applesauce
2 T brown sugar 

Directions:
   1.  Place waffle pieces in a 9x9 baking dish; top with sliced bananas.
   2.  In a small bowl combine eggs and sugar; pour over waffles. Place pineapple over top.
   3.  Combine granola, applesauce and brown sugar; sprinkle over top.
   4.  Bake at 350 for 30-35 minutes; let cool for 5-10 minutes before serving.

Menu June 4

Butter Chicken: This recipe has such an intriguing combination of ingredients, including yogurt, tomatoes, nuts, spices and others. I think my husband and I were both skeptical but it turned out to be quite flavorful; we will definitely try this again in the future.
Southwestern Grilled Pizza: We didn't get to grill it because it was chilly and windy but we loved this anyway and are adding it to our pizza rotation.
Tropical Waffle Bake: We had this once last year and enjoyed it so I wanted to try it again. I ended up modifying it slightly and it turned out great. {Recipe coming soon}

Menu May 21

Ground Beef Stroganoff Soup: This was a big hit, to the point that we're going to have it again this week. I modified the directions a bit to work better with my cooking time frame and we loved the results.

Chicken Fried Rice:This, however, was not a keeper. It didn't work the way it's supposed to and ended up being a very blah dish.
Easiest Ever Peanut Butter Cookies: These were definitely the winner of the week! As advertised, they were very easy to make with only four ingredients. There was a pleasing crunchiness in them but they were still a soft cookie.

Friday Foreshadowing

Oh how I love bookmarking recipes. I also love trying them but unfortunately, that's not quite as simple as the bookmarking part!
  • Overnight No-Cook Refrigerator Oatmeal from The Yummy Life: I am extremely intrigued by this idea and am looking forward to trying some of the different varieties.
  • Homemade Taco Seasoning from $5 Dinners: I just need to remember to buy cumin and then I'll be able to try this easy seasoning.
  • Zucchini Pesto with Linguini from Rachael Ray: Now when we're inevitably given some zucchini this summer I'll know what to do with it!
  • Pineapple Coconut Crisp from My Recipes: My husband doesn't really care for coconut but I'm hoping I'll be able to sneak it by him in this.
  • Southwestern Grilled Pizza from Go Graham Go!: It's been a while since I've stumbled across a pizza recipe that really caught my eye. I can't wait to try this one out though!

Dessert Pizza

This wonderful treat came about because of a slightly failed experiment. I tried to freeze pizza dough but it just wouldn't roll out nicely or rise properly when I went to use it. So, I had some extra dough in the freezer that weren't suitable for "regular" pizzas. Enter the dessert pizza! It doesn't matter that the crust isn't airy and puffy like you want for pizza, in fact, it might almost be better a little flat.

This is almost a non-recipe recipe as I've put a variety of things on, depending on what I have on hand. However, I typically start with peanut butter as the "sauce" and try to put at least one slightly crunchy topping on. Also, mini marshmallows are a must in my book. They add a melty sweetness that is just wonderful!

Dessert Pizza
 Print Recipe
Yields: 8 slices

Ingredients:
1/3 recipe of pizza dough
~2 T peanut butter
~1/2 cup toppings {chocolate chips, granola, crispy cereal, etc.}
1/4 cup mini marshmallows

Directions:
   1.  Roll out dough into desired shape. Spread peanut butter on crust; top with desired toppings, ending with marshmallows.
   2.  Bake at 450 for 8-10 minutes.

Menu May 14

Grilled Pizza Pockets: We didn't grill them because of time constraints but they were still tasty although nothing super exciting.
Oreo Truffles: There was absolutely nothing wrong with these but at the same time they weren't fantastic either. If I had dipped them {as the recipe calls for} maybe that would have changed things.

Menu May 7

Hawaiian Pulled Pork Sandwiches: These were good and my husband really liked them however, there was some little taste in there I didn't care for so I'm not guaranteeing we'll have these again.
 Cinnamon Rolls: These will definitely be added to our rotation!
Dessert Pizza: I've been making dessert pizzas the past few weeks and we've really been enjoying it. {Recipe coming soon!}

Lasagna Soup with Breadsticks {We ended up having Baked Potato Soup last week.}
