Tropical Waffle Bake

The tropical part might sound a little off-putting but this dish comes together in a delicious way. All three of us love this breakfast and it's wonderful, tasty combination. There's just the right amount of sweetness, balanced perfectly by the waffles and eggs.
I like pulling this recipe out when we have just a few waffles in the freezer, it does a great job of stretching them to make a full meal.
Tropical Waffle Bake

Yields: 4-6 servings

Ingredients:
4 waffles, ripped into 2 inch pieces
1 or 2 bananas, sliced
3 eggs
1/3 cup sugar
1 can crushed or chunk pineapple, drained
1 cup granola {mine has cranberries in, a nice addition for this recipe}
1/4 cup applesauce
2 T brown sugar 

Directions:
   1.  Place waffle pieces in a 9x9 baking dish; top with sliced bananas.
   2.  In a small bowl combine eggs and sugar; pour over waffles. Place pineapple over top.
   3.  Combine granola, applesauce and brown sugar; sprinkle over top.
   4.  Bake at 350 for 30-35 minutes; let cool for 5-10 minutes before serving.

Pineapple Chicken Casserole

This dish has a lovely sweetness from the pineapple that contrasts well with the slight saltiness from the soy sauce. I love it just the way it is; my husband likes to add a little extra soy sauce to his serving.
This dish is fairly easy to put together, especially if you do some of the prep work (such as cooking the chicken and cutting the celery) beforehand. I like to reserve some chow mein noodles from the dish so that we can add some crispy noodles after we reheat the leftovers.

Pineapple Chicken Casserole

Yields: 4-6 servings

Ingredients:
2 cups cooked, diced chicken
1 can cream soup (I've been using this recipe instead with great results.)
1 can pineapple tidbits or chunks
2 celery ribs, chopped
1 T green onion, chopped (not pictured)
1 T soy sauce
2 cups chow mein noodles
2 cups cooked rice

Directions:
   1.  Combine chicken, cream soup, pineapple, celery, green onion and soy sauce. Fold in 1 cup chow mein noodles.
   2.  Spread mixture in 2 quart baking dish or 9x13 pan. Spread remaining noodles on top (reserve some for leftovers, if desired).
   3.  Bake uncovered at 350 for 20-25 minutes. Serve over rice.

Hawaiian Tuna Sandwiches

My husband has not always been a huge fan of tuna so the first time I made this it was not without a little apprehension. I'm glad I tried it because we both love the combination of all these flavors, even the tuna! It's very fresh and pleasing.
It doesn't take a lot of work to put together the sandwich filling, just a little bit of chopping and stirring. I've used a variety of breads for these sandwiches, from homemade rolls, to hamburger buns and other sorts of rolls and it's always been good.

Hawaiian Tuna Sandwiches

Yields: 6 sandwiches

Ingredients:
2 cans tuna, drained
1/2 20 oz can pineapple, drained and chopped
1/2 cup green pepper, chopped
1/2 cup carrots, shredded
1/4 cup celery, chopped
1/3 cup mayonnaise
3/4 tsp ginger
salt and pepper
6 rolls

Directions:
   1.  In a medium bowl combine tuna, pinapple, green pepper, carrots, celery, mayonnaise and spices.
   2.  Serve on rolls with optional lettuce and tomatoes.

Sweet Hawaiian Pizza

Growing up when we ordered pizza we always got a supreme and a Hawaiian. To us, that meant simply green pepper and pineapple. It was definitely a family favorite so making this pizza took me back to my childhood.
When I made the sauce for this pizza I used my normal recipe but was extra generous on the sugar. Also, if you choose to use chunk pineapple I would recommend either cutting it or pulsing it in a food processor a few times.

Sweet Hawaiian Pizza

Yields: 4 servings of 2 slices each

Ingredients:
pizza sauce (not pictured)
pizza dough (not pictured)
1/2 can pineapple (crushed, tidbits or chunks), drained
1 green pepper, diced
4-6 slices ham, diced
cheese

Directions:
   1.  Preheat oven to 450.
   2.  Roll out pizza dough to size of pan. Spread sauce across dough.
   3.  Top with pineapple, green pepper, ham and cheese.
   4.  Bake at 450 for 11-14 minutes.

BBQ Chicken Pizza

BBQ Chicken Pizza is my favorite! My failed search for a good one is what started my ventures into homemade pizza. Now we rarely have pizza that isn't homemade. I'd say we're pretty glad I couldn't find a satisfactory one!
I like to buy chunk pineapple and then use the food processor to shred it. I also try to precook the chicken, either earlier in the week or the day. It makes it really easy to put this pizza together. We use homemade dough but store bought is fine as well. We've found the key to a great pizza is to preheat the oven for a longer time than normal.

BBQ Chicken Pizza

Yields: 4 servings

Ingredients:
pizza dough
1/2 can chunk pineapple, shredded
1 large chicken breast, cooked and diced
BBQ sauce
~1 cup shredded cheese

Directions:
   1.  Preheat oven to 450 (or as pizza dough package recommends).
   2.  Roll out dough to fit pan. Spread BBQ sauce over dough, leaving the edges clean. Evenly place chicken and pineapple across dough. Cover with cheese.
   3.  Bake 12 minutes, broiling 1-2 minutes at end, if necessary. Let pizza sit 2 minutes before cutting.
